Loaded Potato Soup

INGREDIENTS:

12 oz bacon
1 1⁄2 cups chopped onion
6 cups chicken broth
4 lb baking potatoes, peeled and cubed
2/3 cup butter
3⁄4 cup all-purpose flour
4 cups milk
2 tsp salt
2 tsp freshly ground pepper
2 cup diced cooked ham
1 8 oz sour cream
2 1⁄2 cups shredded sharp Cheddar cheese
3⁄4 cup sliced green onions 

 

In a 12 inch skillet, cook bacon over medium heat 6 to 7 minutes or until crisp, drain on paper towels. Crumble bacon; set aside.

Add the chicken broth, potatoes and onion to the CanCooker. Latch lid and let simmer for 10 minutes on medium/low heat. Remove from heat and mix in butter, flour, milk, salt, pepper, ham and sour cream.

Latch lid and return to medium/low heat. Simmer for an additional 10 minutes.

Remove from heat and add cheddar cheese, bacon and green onions.

Garnish with additional cheddar cheese, bacon and green onions, if desired.
