- 1 lb pork tenderloin
- 1 bag frozen broccoli, carrots and cauliflower
- 1 tbsp vegetable oil
- 1/2 cup apricot preserves
- 1 tbsp hoisin sauce
- 12 oz. beer
- Hot cooked rice
In medium bowl combine vegetable oil, apricot preserves and hoisin sauce and mix well. Place 2 piece rack in bottom of the CanCooker and add 12 oz. beer. Place the pork loin on the rack and cover with apricot spread. Cover and cook on medium low for 25-30 minutes. Carefully open the lid and add the frozen vegetables. Cover and cook an additional 10-15 minutes. Let rest in CanCooker for 5 minutes. Serve over rice.
