Beef and Barley Soup

  • 2 tbsp butter
  • 1 large onion, chopped
  • 2 lbs beef round steak
  • 2 cups chopped carrots
  • 1 stalk celery, chopped
  • 1 green pepper, diced
  • 1 (16 oz) can tomatoes
  • 1 cup frozen corn
  • 2 ½ cup green beans
  • 1 cup barley
  • 1 tbsp dried parsley flakes
  • 4 tbsp beef bouillon granules
  • 5 cups water


Melt butter in non-stick CanCooker Jr. or Companion. Add onion and cook for a couple of minutes until translucent.

Add meat, carrots, celery, and peppers. Cook for 15-20 minutes or until meat cooked through, stirring frequently.

Add the rest of the ingredients and cook for 55 minutes, stirring occasionally.
Remove from heat and let cool for about 10 minutes before serving.
