Beef Cannellini Bean Minestrone Soup

  • 2 tbsp Olive oil
  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery sticks
  • 1/8 tsp each salt and pepper
  • 1/4 tsp Italian seasoning
  • 1 lb ground beef
  • 2 links sweet Italian sausage, cut into chunks
  • 3 minced garlic cloves
  • 6 cups beef broth
  • 1 Tbsp tomato paste
  • 1 28 oz can diced tomatoes
  • 1 15 oz can cannellini beans, rinsed & drained
  • 1 bay leaf
  • 1 lb ditalini pasta
  • Parmesan for garnish


Instructions: Heat oil in CanCooker, Stir in onion, carrots, celery, & salt and pepper. Add sausage. Cook about 5 minutes. Add ground beef, garlic, and seasonings. Cook until browned and cooked through. Stir in tomato paste, mix. Add broth, tomatoes, beans, and bay leaf. Bring to a boil. Cover and cook for 15 minutes.
Meanwhile cook your pasta in a separate CanCooker. Once cooked, strain with your strainer lid. Add the pasta to the soup, sprinkle Parmesan cheese on top. Serve & enjoy.
