Cheddar Hashbrown Soup

  • 5-6 russet potatoes (Shredded)
  • 1 small yellow onion
  • 2 tbsp olive oil
  • 32 oz chicken stock
  • 1 can cream of chicken
  • 2 cups sharp cheddar cheese
  • 1 pack cream cheese
  • 1/2 cup bacon bits


In a non-stick CanCooker JR or CanCooker Companion on medium low heat add oil and onion until translucent. Once onion is translucent add potatoes and cook for 3-5 minutes stirring constantly. Add chicken stock and simmer for 20 minutes. Once potatoes are soft and tender add cream of chicken, cheddar cheese, cream cheesed bacon bits. Continue to cook for another 10 minutes stirring regularly until all ingredient are combined. Let sit for 5-10 minutes and enjoy!

*Spray inside with non-stick cooking spray to aid in clean-up for JRs & Companions.
