  • 2 pounds boneless skinless chicken thighs diced ¼ inch
  • 2 tablespoons honey
  • 2 tablespoons garam masala or curry powder (curry will change the taste slightly but still delicious)
  • 1 onion cut in half, sliced thick
  • 1 bell pepper cut in half, sliced thick
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 2 teaspoons turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 14 ounce can coconut milk (full fat)


In a nonstick CanCooker add all the ingredients, place on lid and cook on a low medium heat for 20 minutes. Remove lid, let simmer to reduce liquid until thickened 10 to 15 minutes. Serve over rice!
