INGREDIENTS (per serving):

  • 1 halibut filet
  • 1⁄4 tsp lemon juice
  • 1⁄2 tsp white wine
  • 2 tbsp canned diced tomatoes
  • 1⁄2 tsp capers
  • 1 tbsp sliced black olives
  • 1 tbsp butter
  • 1⁄2 tsp dried basil
  • Fresh ground pepper to taste
  • 12 oz water


Place the 2-piece rack into the CanCooker and pour in the water.

In a small, 3-cup baking dish (7.5" x 5.5"), add a single filet and put all the ingredients on top of the filet in the order they are listed above. You will repeat this for the number of filets you want to cook and you can stack several baking dishes Lincoln-log style in the CanCooker.

Put the baking dish or dishes into the CanCooker and latch the lid. Heat on low to medium/low and steam for 4 minutes. Remove from heat and let stand for 5 minutes.

Carefully remove the baking dishes with oven mitts and serve.
