Loaded Potato Soup

  • 12 oz bacon
  • 1 1⁄2 cups chopped onion
  • 6 cups chicken broth
  • 4 lb baking potatoes, peeled and cubed
  • 2/3 cup butter
  • 3⁄4 cup all-purpose flour
  • 4 cups milk
  • 2 tsp salt
  • 2 tsp freshly ground pepper
  • 2 cup diced cooked ham
  • 1 8 oz sour cream
  • 2 1⁄2 cups shredded sharp Cheddar cheese
  • 3⁄4 cup sliced green onions 


In a 12 inch skillet, cook bacon over medium heat 6 - 7 minutes or until crisp, drain on paper towels. Crumble bacon; set aside.

Add the chicken broth, potatoes and onion to the CanCooker. Latch lid and let simmer for 10 minutes on medium/low heat. Remove from heat and mix in butter, flour, milk, salt, pepper, ham and sour cream.

Latch lid and return to medium/low heat. Simmer for an additional 10 minutes.

Remove from heat and add cheddar cheese, bacon and green onions.

Garnish with additional cheddar cheese, bacon and green onions, if desired.
