- 2 lbs potatoes, peeled and cut into 2” cubes
- 3 tablespoons butter
- 1 cup milk
- Salt and Pepper
- 12 oz of water
Insert rack into the CanCooker and coat the inside with non-stick cooking spray. Add potatoes and water. Close and latch lid; place on low/medium heat. Steam for 30 minutes or until potatoes are tender. Drain the potatoes into a colander and transfer to a bowl. Using a potato masher or electric mixer, slowly blend milk and butter into the potatoes until smooth. Season with salt and pepper to taste.
