Mediterranean Infused Chicken

  • 2 cups chicken stock
  • 2 lemons (1 juiced, 1 sliced)
  • 4 cloves chopped garlic
  • 4 tsp. CanCooker onion pepper seasoning
  • 4 boneless skinless chicken breasts
  • 1 1/2 lbs. new red potatoes
  • 1 medium red bell pepper
  • 1 medium red onion
  • 16 oz. white mushrooms

Place rack in the bottom of any size CanCooker.  On medium low heat pour 2 cups chicken stock and the 1 juiced lemon. Place chicken breasts on rack and season with onion pepper seasoning, garlic and sliced lemon.  Add red potatoes, bell pepper and red onion.  Cook for 25 minutes, open and add mushrooms.  Continue to cook for another 20 minutes.  Let stand for 5 minutes before serving.
