Place rack inside non-stick CanCooker Jr or CanCooker Companion, add water and pineapple juice. Peel your sweet potatoes, make cuts halfway through about ¼ inch wide and place on rack. On med-low heat steam sweet potatoes for about 20 minutes. Remove sweet potatoes and set aside.Remove rack, drain liquid and wipe CanCooker clean. On med-low heat and add olive oil, flour, onion and garlic. Stir on low- med heat until onion is tender. Add pecan pieces, water, salt and pepper. Cook for about 15-20 minutes stirring occasionally. Cut sweet potatoes and serve with the gravy.
