For use with any CanCooker

Ingredients
- 4 Chicken Thighs Bone In
- 2 tsp Olive Oil
- 1 Onion Thinly Sliced
- 1 cup Apricot Preserves
- 2 tbsp Soy Sauce
- 1 tbsp Dijon Mustard
- 1 tsp Fresh Ginger Minced
- 2 tbsp Parsley Chopped
Directions
- Lay chicken thighs in the bottom of a Non-Stick Jr. or Companion. Mix olive oil, apricot preserves, soy sauce and Dijon mustard together. Once blended pour over the chicken thighs. Layer sliced onions on top of the chicken. Place lid on CanCooker and simmer on a low to medium heat for 45 minutes. When chicken thighs are fully cooked removed from the CanCooker and top with chopped parsley.
Best Ever – The taste was sweet and so juicy inside, yum, yum.
