For use with any CanCooker

Broccoli Cheese Soup


  • 1 tbsp butter
  • 1 small onion diced
  • 1 cup carrots diced
  • 3 cups fresh broccoli
  • 2 cups chicken broth
  • 1/2 tsp thyme
  • 1 tsp CanCooker Butter Garlic Salt
  • 2 tbsp flour
  • 1 1/2 cups half & half
  • 1 cup sharp cheddar cheese
  • 1/3 cup parmesan cheese
  • salt and pepper to taste


  • In any CanCooker, on a medium-to-medium low heat source, melt the butter.  Add onion and carrots and cook until the onion has softened about 3 minutes.  Add broccoli, chicken broth and seasonings.  Continue to cook until the broccoli is softened about ten minutes. 
  • Place the flour in a separate small bowl and add in cream a bit at a time stirring until smooth. Whisk in cream mixture into the CanCooker.  Continue stirring until thick and creamy, about five minutes.  Stir in cheeses until melted and serve immediately.
