Cod Picatta


  • 1 ½ lbs cod fillet
  • 1/3 cup flour
  • ¼ cup Parmesan cheese grated
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 clove garlic minced
  • 1 tsp corn starch
  • ¼ cup capers
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper
  • 2 tbsp parsley chopped


  • Cut cod fillet to desired size pieces and season with salt and pepper on both sides.
  • In a medium bowl combine flour and parmesan cheese.
  • Dip cod fillets into flour and cheese mixture and shake off any excess flour.
  • In any CanCooker on a medium-to-medium low heat source add the olive oil and cod fillets.
  • Cook on each side for about 5 minutes until brown.
  • Transfer cooked fillets to a plate.
  • Melt the butter and add garlic, sauté for 30 seconds.
  • Add in the heavy cream and chicken broth, stirring occasionally.
  • In a small bowl mix together corn starch and 1 tablespoon of the Piccata sauce.
  • Add the mixture to the CanCooker and whisk until thickened.
  • Add lemon juice, capers and season the sauce with salt and pepper.
  • Add cod back to the Cancooker and cook until warmed through.
  • Sprinkle the cod Piccata with parsley and serve.
