Halibut Vinaigrette

Halibut Vinaigrette

Prep Time - 10 minutes
Cook Time - 20 minutes


  • 1 ½ pounds Red New Potatoes Quartered
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Fresh Thyme
  • ½ tsp Crushed Red Pepper
  • Kosher Salt and Black Pepper
  • 4 6oz Fillets of Halibut, Striped Bass or Cod
  • 1 Shallot Thinly Sliced
  • 1 bunch Kale Leaves torn into bite-size pieces
  • 12 ounces Water


  • Place the 2 piece stainless steel rack on bottom of the CanCooker and add 12 oz water.
    Place the potatoes and shallot on the rack, latch lid and steam on low/medium heat for 10 minutes.
    In separate bowl, mix the lemon juice, thyme, crushed red pepper, olive oil, salt and pepper. 
    Remove the CanCooker from heat and add fish fillets and kale. Drizzle with seasoning mixture. Latch lid and steam on low/medium heat for an additional 8 minutes.
    Remove from heat and let cool for 5 min. Garnish with lemon wedges.
