Lemon-Poppy Seed Bread

Lemon-Poppy Seed Bread

Prep Time - 10 minutes
Cook Time - 30 minutes


  • ¾ cup Milk
  • ¼ cup Vegetable Oil
  • 2 Eggs
  • Box of Lemon Poppy Seed Muffin Mix Pouch of Lemon Glaze


  • Stir Lemon-Poppy Seed Mix, milk, oil and eggs in medium bowl just until blended (batter may be lumpy).
    Grease miniature loaf pans and pour batter into pans approx 2/3 full.
    Place rack in the bottom of the CanCooker or CanCooker Jr and add water to the top of the rack. Place 2 pans of batter on top of the rack. Place lid on and steam for 30 minutes.
    Remove and let cool.
    Drizzle lemon glaze over loafs.
    NOTE: You will need to use miniature loaf pans (we used aluminum disposable ones) Size 5-1/2 inches long X 3-1/2 inches wide X 2 inches deep. Only 2 pans will be able to fit into CanCooker at a time.
    This recipe will yield 4 loafs.
    Make batter ahead of time and place in storage container for easier use at campsite, etc.
