CanCooker Pumpkin Bread Recipe

Pumpkin Bread

Prep Time - 10 minutes
Cook Time - 30 minutes


Wet Ingredients:

  • 1 ½ cups Canned Pumpkin Or Fresh
  • 2 tbsp Melted Butter
  • ¼ cup Lowfat Milk
  • 1 Egg Lightly Beaten

Dry Ingredients:

  • 1 ½ cups All-Purpose Flour
  • ¼ cup Packed Brown Sugar
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ tsp Clove
  • ¼ tsp Cumin
  • ½ tsp Salt


  • In a medium bowl, whisk together the wet ingredients.  In a large bowl, combine dry ingredients.  Spray a mini loaf pan with nonstick cooking spray.  Gradually add the wet ingredients to the dry ingredients and mix until just moist.  The batter will be thick.  Pour batter into the prepared pan.  
    Place rack in the bottom of the CanCooker and add enough water to reach the top of the rack. Place mini loaf pan on the rack.  Latch lid and steam on low to low/medium for 45 minutes.  Remove from heat and let cool for 5 minutes.
    Top with whipped cream or cream cheese frosting, if desired.
