Pumpkin Rice with Bacon


  • 3/4 cup cooked bacon chopped
  • 1 tbsp olive oil
  • 1 1/2 cups onion diced
  • 3 cups Minute Rice™
  • 3 cups chicken broth
  • 3/4 cup pumpkin puree
  • 1/2 cup grated parmesan cheese
  • 2 tbsp parsley chopped


  • In any CanCooker, add olive oil and onions.  Cook on medium-to-medium low heat, stirring occasionally until the onions are tender. Add the bacon, rice, chicken broth, pumpkin puree, and parmesan cheese. Stir until well combined. Place lid on, CanCooker and continue to cook for 10-15 minutes until rice is tender. Place rice in a serving dish and top with chopped parsley.
