Steam Coconut Cake

Steam Coconut Cake

Prep Time - 10 minutes
Cook Time - 30 minutes


  • 3 cups Bisquick
  • 1 ¼ cup Sugar
  • ¼ tsp Salt
  • 4 Eggs
  • 1 tsp Vanilla
  • 2 cups Coconut Milk
  • 1 tbsp Butter
  • 1 can Reddi-Whip


  • Mix ingredients well.
    Grease miniature loaf pans or springform pans and add batter approximately 2/3 full.  
    Place rack in the bottom of the CanCooker and add water to the top of the rack.  Set the loaf pans or springform pans on rack.  Place lid on, latch and steam on low to low medium heat for 30 minutes.  
    Serve individual slices with Reddi-Whip and Enjoy!
    NOTE***You will need to use miniature loaf pans (we used aluminum disposable ones) Size 5-1/2 inches long X 3-1/2 inches wide X 2 inches deep. Only 2 pans will be able to fit into CanCooker at a time.  Another option is the springform pans and 3 of those pans fit into the CanCooker at a time.  
    This recipe will yield 4 loafs.
    Make batter ahead of time and place in storage container for easier use at campsite, etc.
