Excellent – I decided my boys and I would make stuffed peppers for Mother’s Day.
Went to Aldi’s and found these Huge yellow and red peppers. I was worried the meat, rice, mix would not fill the mega peppers. However, I had three cups left over that I had to put in a pan and cook in the oven to a more traditional meat loaf pan.
I turned the heat to 2 and put the water in, then I started mixing the ingredients. When I stuffed the peppers lightly until all 6 were filled.
I had steam i9n 5 minutes and at 40 minutes my wife sampled the rice and it still was not done, 10 more minutes on heat did the trick and the rice was good.
Added shredded cheese and let sit 10 minutes.
These were awesome and really easy to make, trick is to fish out some of the rice at the 40 minute mark and make sure it’s not crunchy. When the rice is good it is time to add cheese and wait 10 minutes.
Couldn’t be more happy with the outcome.
