Apricot Cranberry Chicken

Ingredients
- 1 ½ lbs. chicken tenderloins – divided
- ¼ tsp salt
- 2 tbsp olive oil – divided
- 1 medium onion – chopped
- ¾ cup chicken broth
- ½ cup dried cranberries
- ½ cup apricot preserves
- 2 tbsp cider vinegar

Directions
- Sprinkle chicken with salt.
- In any CanCooker on a medium-to-medium low heat source, add 1 tablespoon oil and half of the chicken, brown on both sides.
- Remove from the CanCooker and repeat with the remaining oil and chicken.
- Add onion, cook 2-3 minutes until tender.
- Stir in the chicken broth, cranberries, apricot preserves and the vinegar.
- Stir for 2-3 minutes until slightly reduces.
- Return chicken to the Cancooker and cook for an additional 4-6 minutes until the chicken is warmed through.
- Place on a serving tray and enjoy.
