Ingredients

1 package 15 oz Honey Cornbread & Muffin Mix
- ¼ cup brown sugar – packed
- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 Large egg
- 6 oz. fresh blueberries
- 4 Miniature Loaf pans or * 12 Heavy Duty Muffin Liners
Things You Need
Directions
Stir together the cornbread mix and brown sugar in a large bowl.
- Add in the milk, oil, and egg and stir until just moistened, fold in the blueberries carefully.
- Grease two of the miniature loaf pans and fill half full with the batter.
- In any CanCooker place rack in the bottom and add water to the bottom of the rack.
- Place loaf pans on the rack and on a medium-to-medium low heat bring the CanCooker to a steam.
- Steam the cornbread for 30 -45 minutes or until a toothpick inserted in center come out clean.
- Repeat with the two remaining loaf pans of cornbread.
*If using Muffin Liners*
Spray with non-stick cooking spray.
- Fill liners half full with batter.
- Place 6 muffins on the CanCooker rack and steam for 30 – 45 minutes or until toothpick inserted in center comes out clean.
- Repeat with the remaining 6 muffins.
