Made with eggs, bacon and onion, this fried rice provides a hearty breakfast on a weekend morning. Perfect when you have leftover rice!

Ingredients

1 tbsp vegetable oil

3 eggs, lightly beaten

5 slices bacon

1 cup yellow onion, diced

½ cup scallions, sliced green and white parts

4 cups cooked white rice, chilled

1 cup frozen peas and carrots

2 tbsp soy sauce

¼ tsp black pepper

Directions
Heat oil in any CanCooker on a medium-to-medium low heat source until oil is just smoking. Add eggs in an even layer and cook, stirring until very little liquid egg remains, 30 to 60 seconds. Transfer to large plate cut into large squares.
- Add bacon to CanCooker cook until crisp, transfer to paper towels to drain. Crumble into bite-sized pieces.
- Add both yellow onions and scallions to CanCooker, sauté until softened, about 5 minutes.
Add rice, press into an even layer on the bottom of CanCooker on medium heat, let cook without stirring until lightly browned about 5 to 7 minutes. Add egg pieces, bacon, frozen peas and carrots and soy sauce. Stir gently to mix. Heat through. Sprinkle with salt and pepper.
