Butter Garlic Steamed Clams

Ingredients

3 dozen littleneck or middleneck clams
- 4 tbsp salted butter
- 5 garlic cloves – minced
- 1 shallot – minced
- 1 cup white wine
- 1 cup claim juice
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ tsp crushed red pepper
- Juice of ½ lemon
- ½ cup heavy whipping cream
- 2 tbsp fresh parsley – chopped
- Optional – lemon wedges
Things You Need
Directions
Soak and rinse the clams.
- Reserve in fridge.
- In any CanCooker on a medium-to-medium low heat source, melt the butter.
- Add in the garlic and shallots, cook for 2-3 minutes until fragrant and tender.
- Pour in the claim juice and white wine and then season with the salt, pepper and crushed red pepper.
- Add in the clams and the lemon juice.
- Place lid on the CanCooker and allow the clams to steam open, about 8-10 minutes.
- Discard any clams that fail to open.
- Add in the heavy whipping cream and stir to coat.
- Garnish with the fresh chopped parsley.
- Serve with crusty bread and lemon wedges if desired.
