Directions
Prep four aluminum mini loaf pans pan by spraying them with baking spray. Make sure your eggs are room temperature by placing them in a bowl of tepid water for 5-10 minutes.
Place warm water, oil, and eggs into a stand mixer with whisk attachment. (Or use a large bowl and hand whisk) Whisk the ingredients together, starting on low speed and moving up, until the eggs start to look foamy, add cake mix and continue mixing on low speed.
Add 1 can of coconut pecan frosting, mix well, add chopped pecans if using. Pour batter into the prepared mini loaf pans until approximately 2/3 full.
Place the 2-piece rack into any CanCooker and add 12-16 ounces of water, or to the top of the rack, place two loaf pans onto the rack.
On a medium-to-medium low heat source steam the cakes with the lid on for 30-35 minutes or until toothpick in center comes out clean. Refill with water for second set of cakes.
Cool loaves and spoon Coconut Pecan Frosting onto the mini loaves. Cake is very moist and delicious!
