Chicken Thigh Osso Buco

Usually, Osso Buco is a dish made with expensive veal shanks. The dark meat of the chicken thigh resembles the tender meat of the veal. Cooks tip; for leftover thighs remove the meat from the bone and add to sauce. Makes reheating quicker.

Ingredients

6 chicken thighs, trimmed with skin and bone in

2 tbsp olive oil

1 onion, diced (1 cup)

3 garlic cloves, minced (or ½ tsp garlic powder)

1 carrot, chopped

1 celery stalk, chopped
-
1 tsp dried rosemary
-
¼ tsp dried thyme
-
½ cup dry white wine (if not available add ½ cup additional chicken stock)

1 cup chicken stock
-
2 tbsp tomato paste
-
1 tbsp chopped fresh parsley for garnish

Salt and pepper to taste

Cooked rice or noodles for serving.

Season the chicken thighs generously with salt and pepper.
Heat the oil in any CanCooker on a medium-to-medium low heat source, add the seasoned chicken thighs. Cook them on both sides for about 4 to 6 minutes per side, until golden brown. Remove chicken thighs from CanCooker, cover and set aside.
Add the onion, garlic, carrot, celery, rosemary and thyme to the CanCooker, sauté for 5 minutes or until the onion begins to soften. Season with salt and pepper as needed.
- Stir in the white wine, if using, chicken stock and tomato paste. Bring to a boil, then add the chicken back to the CanCooker and cover with lid and cook for another 10 to 15 minutes, or until an instant read thermometer inserted in thickest portion of meat (not touching bone) registers 165°F
Garnish with chopped parsley and serve over rice or noodles.
