Ingredients

2 tbsp butter

1 lb bonless and skinless chicken breast cut in 1 inch cubes

1 onion, chopped

1 yellow pepper seeded and chopped

1 green pepper seeded and chopped
-
3 cloves garlic, minced

Salt and fresh ground pepper

¾ cup uncooked long grain rice

2 cups chicken broth
-
1 tsp Better than Boullion Chicken Flavor
-
1 bunch asparagus (about 12 spears, cut into 1-inch pieces)
-
Fresh parsley for garnish.

Directions
Melt the butter in any CanCooker on a medium-to-medium low heat source. Add cubed chicken breast and cook until the chicken is no long pink, about 5 minutes.
Stir in the chopped onion, yellow pepper and garlic. Season with salt and black pepper. Cook for another 3 minutes until the onion is soft.
- Add the rice, chicken broth, boullion and stir. Cover the CanCooker and simmer for 10 minutes.
Add asparagus and cook for another 5 minutes or until the risce is cooked and all the broth is absorbed.
Season with additional salt and black pepper and garnish with parsley.
