Garlicky Hoisin Shrimp with Mushrooms and Asparagus

Quick and easy, prep and cook in 15 minutes. Baby bella mushrooms can be replaced by other types of mushrooms, you can also replace shrimp with chicken breast, cut into ½ inch pieces.

1 tbsp sesame oil

1 lb jumbo shrimp deveined with shells removed

1 tbsp olive oil

¼ asparagus, ends trimmed and cut into 1 ½ inch pieces

2 cups Baby Bella mushrooms, sliced

1/3 cup soy sauce
-
1 tsp minced fresh ginger (or ¾ tsp ginger powder)

½ cup chicken stock
-
¼ cup hoisin sauce
-
5 cloves garlic, minced (or 1 tsp garlic powder)

1 tbsp hot sauce
-
2 tbsp cornstarch
-
1 tbsp sesame seeds

Directions
Heat sesame oil in CanCooker, add shrimp and sauté approx. 1 minute per side. Remove from the CanCooker and set aside. (if using chicken breast sauté until no longer pink and cooked through.)
Heat 1 tbsp olive oil in CanCooker, add mushrooms and asparagus. Sauté for 4 minutes over medium heat until vegetables begin to soften.
- Meanwhile, whisk soy sauce, garlic, ginger, hoisin sauce, hot sauce, chicken stock and cornstarch together.
Pour sauce over the sauteed mushrooms and asparagus and cook for 2 minutes until the sauce thickens
Add the shrimp back to CanCooker and toss everything together.
Sprinkle the sesame seeds over the cooked dish and serve over hot rice.
