During corn season this is a favorite, but frozen corn works well. Cook’s Tip; if jalapeno peppers are seeded with membrane removed spice level is mild, a finely chopped chipotle pepper can be added to give dish a smoky flavor.

¼ cup butter, cubed

1 small onion, diced (1 cup)

2 to 3 jalapeno peppers, seed and diced
- 6 plum tomatoes, seeded and diced

5 cups fresh or frozen corn

1 ½ tsp salt.

Directions
Add cubed butter to any CanCooker on a medium-to-medium low heat source, heat until butter is melted.
Add diced onion and jalapenos sauté until onion is softened, 3 to 4 minutes.
Stir in diced plum tomatoes, cook 3 minutes.
- Add corn, sauté until tender, stirring occasionally, 8 to 10 minutes, stir in salt.
