Lemon-Poppy Seed Bread

- Stir Lemon-Poppy Seed Mix, milk, oil and eggs in medium bowl just until blended (batter may be lumpy). Grease miniature loaf pans and pour batter into pans approx 2/3 full.Place rack in the bottom of the CanCooker or CanCooker Jr and add water to the top of the rack. Place 2 pans of batter on top of the rack. Place lid on and steam for 30 minutes.Remove and let cool.Drizzle lemon glaze over loafs.NOTE: You will need to use miniature loaf pans (we used aluminum disposable ones) Size 5-1/2 inches long X 3-1/2 inches wide X 2 inches deep. Only 2 pans will be able to fit into CanCooker at a time.This recipe will yield 4 loafs.Make batter ahead of time and place in storage container for easier use at campsite, etc.
