Lemon Red Potatoes

Ingredients

1 ½ pounds medium red potatoes
- 1 ½ cups water
- ¼ cup butter – melted
- 3 tbsp fresh parsley – minced
- 1 tbsp lemon juice
- 1 tbsp chives – minced
- Salt and pepper to taste

Directions
Cut a strip of peel from around the middle of each potato.
- Place the potatoes on the rack and in any CanCooker and add water.
- Put the CanCooker on a medium-to-medium low heat source.
- Cook the potatoes 15-20 minutes, until tender.
- In a small bowl combine the butter, parsley, lemon juice and chives and set aside.
- Using the CanCooker Strainer Lid, drain the water off of the potatoes, remove rack.
- Pour the butter mixture over the potatoes, tossing to coat.
- Season with salt and pepper and serve warm.
