Marry Me Chicken

Ingredients
- 3 tbsp extra virgin olive oil – divided
- 4 – 8 oz chicken breasts – boneless and skinless
- Salt and pepper
- 2 cloves garlic – finely chopped
- 1 tbsp thyme leaves
- 1 tsp crushed red pepper flakes
- ¾ cup low sodium chicken broth
- ½ cup sun–dried tomatoes – chopped
- ½ cup heavy cream
- ¼ cup finely ground grated Parmesan
- Fresh basil - torn
Things You Need
Directions
- On a medium-to-medium low heat source, add in 1 tablespoon olive oil to the CanCooker.
- Season chicken breasts with salt and pepper and place in the CanCooker, cook turning halfway through, until golden brown, about five minutes per side.
- Transfer chicken to a plate.
- Add the remaining 2 tablespoons of olive oil to the CanCooker.
- Stir in garlic, thyme, and red pepper flakes, stir until fragrant about 1 minute.
- Add the broth tomatoes, cream, and Parmesan cheese, stir until combined.
- Add in the chicken and any juices to the CanCooker.
- Place lid on the CanCooker and cook for 20 minutes.
- Arrange chicken on a platter and spoon sauce on the top.
- Top with torn basil.
