This mushroom cauliflower skillet is an easy one-pan side dish. Sautéed mushrooms and cauliflower with a garlic butter sauce, topped with brown butter panko and parmesan cheese and finished with fresh thyme and lemon.

Ingredients

2 tablespoons butter, divided

2 cups sliced mushrooms, fresh or frozen

3 cloves garlic, minced

1 small head cauliflower, cut into small florets

salt and freshly ground black pepper to taste

¼ teaspoon red pepper flakes

1/3 cup panko bread crumbs

2 tablespoons grated Parmesan cheese

1 teaspoon fresh thyme leaves

1 teaspoon lemon juice, to finish

Directions
- In any CanCooker on a medium-to-medium low heat source, heat 1 tablespoon butter, add panko and toast until light brown in color, remove from CanCooker and set aside in a small bowl to cool, add parmesan cheese and thyme, stir together.
- Add remaining 1 tablespoon butter to CanCooker, melt butter, add mushrooms and saute stirring occasionally, until they release their liquid and start to brown, 5 to 7 minutes.
Add minced garlic and cook until fragrant, about 1 minute more.
- Stir in cauliflower florets, season with salt, pepper and red pepper flakes.
Cook until cauliflower is slightly tender, 5 to 6 minutes, stirring occasionally.
- Remove from the CanCooker and drizzle with lemon juice for brightness. Top with Panko mixture.
