Mussels with Creamy White Wine Garlic Sauce

Ingredients
- 4 tbsp butter
- 1 yellow onion – cut in half and sliced in ½ inch moons
- 3 garlic cloves – minced
- ½ lemon
- 4 lbs. mussels – scrubbed and debearded
- 1 cup dry white wine
- 1 ¼ cups heavy cream
- Freshly ground pepper
- Flat leaf parsley – chopped
- Lemon wedges for serving

Directions
- In any CanCooker on a medium-to-medium low heat, melt the butter.
- Add in the onion and garlic and cook until soft, about 5-7 minutes.
- Squeeze the juice from the lemon into the CanCooker.
- Add the mussels, wine and place the lid onto the CanCooker.
- Steam the mussels for 4 to 5 minutes until most of them have opened.
- Pour in the heavy cream and add a few grinds of fresh black pepper.
- Replace the lid and continue to cook for another 2-3 minutes.
- Remove any mussels that have not opened.
- Place on a serving tray and top with the parsley.
- Serve with additional lemon slices if desired.
