Pork Stroganoff with Dill

Ingredients
- 2 lbs. pork tenderloin
- 1 tbsp olive oil
- 2 cloves garlic – minced
- 2 tsp fresh thyme – minced
- 1 lb. mushrooms – washed and stems trimmed
- ¼ cup white wine
- 2 cups chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- 2 tbsp chopped fresh dill or 1 tsp dried dill

Directions
- Trim the pork tenderloins by removing visible fat.
- Slice the pork tenderloins into ½ inch slices, then cut each slice horizontally.
- Put them in a bowl and season with salt and pepper, 1 tablespoon olive oil, garlic and thyme.
- Mix well.
- In any CanCooker on a medium-to-medium low heat source, sear the pork tenderloins in batches, just to brown the outside.
- Remove from the CanCooker and set aside.
- Add mushrooms to the Cancooker and sauté for 3-5 minutes.
- Deglaze the pan with white wine and then add the chicken broth and cook for 5 minutes.
- Return the pork to the CanCooker and cook for 8-10 minutes until the pork has warmed through.
- Remove from heat source and stir in the sour cream and the dill.
