Spicy Camper’s Bacon and Beans

A few slices of applewood smoked bacon give this recipe some extra smokey flavor. Using a store-bought barbecue sauce speeds up the process for these sweet and spicy beans.

Ingredients

4 slices applwood-smoked bacon, cut into small pieces

1 small onion, diced (1 cup)

½ cup dark beer

½ cup chicken stock

1 cup store-bought barbecue sauce

1 tbsp molasses
-
1 tbsp dark brown sugar

1 tbsp soy sauce
-
1 tbsp hot sauce
-
1 tbsp smoked paprika

1 (15 oz) can kidney beans
- 1 (15 oz) can great northern beans

1 tbsp fresh parsley, chopped
-
2 green onions, sliced

Salt and pepper to taste

Directions
Render the bacon in any CanCooker on a medium-to-medium low heat source for about 2 to 3 minutes or until golden, add diced onion, cook 3 more minutes or until onion is soft and translucent.
- Add beer, chicken stock, barbecue sauce, molasses, brown sugar, soy sauce, hot sauce and paprika and stir well.
Stir in beans, add salt and pepper to taste.
Bring to a boil, lower heat to medium low and let beans simmer for approx. 20 minutes, stirring occasionally.
Remove from heat and garnish with fresh parsley and sliced green onions.
