Directions
In a bowl crack four eggs, add milk and pepper, mix together and set aside.
Add bacon to CanCooker and brown until crispy and remove, set on paper towels to catch grease. When cooled, cut into 1-inch bite-sized pieces.
Add the sausage and flatten on the bottom of the CanCooker with a spatula. Cook sausage without moving until the bottom is browned and caramelized, then flip to brown the second side until cooked through. Break sausage into bite-sized pieces.
Add white parts of green onions to the CanCooker with sausage and sauté until soft.
Add 1 cup cheese to the top of sausage and onions, don’t mix. Slowly pour egg mixture over the cheese in a circular motion to cover the cheese.
Add the tater tots to the top of everything one scoop at a time so they sit on top of the cheese and egg mixture. Close lid and lower heat to medium low. Cook for 30-40 minutes or until the tots are warmed through.
Remove lid and add remaining 1 cup of cheese to cover the top of tots, sprinkle with green parts of onions. Close lid and cook an additional 10-15 minutes or until cheese is melted and the tater tots are hot. Add the chopped cooked bacon to the top and serve.
