Chorizo Breakfast Hash

  • 1 Tbsp cooking oil
  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1/2 lb. pork chorizo
  • 1 lb baby red potatoes diced
  • 1/2 tsp chili powder
  • 3 green onions, sliced
  • 4 large eggs fried (optional)
  • 4 Tbs sour cream (optional)
  • 4 Tbs salsa (optional)
Heat 1 Tbsp of cooking oil in any non-stick CanCooker over medium low heat and saute onion and bell pepper. Add chorizo and cook until chorizo is browned. Add diced potatoes and chili powder, stir to blend and place lid on CanCooker and steam for 15 minutes. Stir occasionally until potatoes are tender. Top with green onions and serve with your choice of fried eggs, salsa, or sour cream.

    Ive been a huge fan of chorizo and just love coming across any recipes that have used this underappreciate meat. this was so simple and quick I almost didnt know what to do with all the extra time I saved making this fast breakfast .
