Instructions
Add the onions, water and ham into the CanCooker. Heat on medium and simmer for 40 minutes. Prepare the dumplings while the stock is cooking.
Mix the dry dumpling ingredients together in a large bowl. Add the eggs and mix thoroughly. Gradually add 3 cups of ham stock plus 1 cup of water. The dumpling dough should have a consistency similar to mashed potatoes.
After 40 minutes, remove the stock from heat. Remove and debone the ham. Cut the ham into bite size pieces. Return the ham to the CanCooker. Heat on medium and bring to a rolling boil.
Slowly add 3 cups of non-dairy creamer to the stock and mix thoroughly.
Add the celery to the stock and start dropping the dumplings by dipping a tablespoon into the hot stock and spooning dumpling dough into the stock. Dip the spoon into the stock every so often so the dumpling dough doesn’t stick to the spoon.
