1 tablespoon olive oil
- 1 pound smoked kielbasa or Polish sausage, sliced
- 6 medium red potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow pepper, sliced
In any non-stick CanCooker heat olive oil on medium heat. Add kielbalsa and potatoes, cover and cook 25 minutes, stirring occasionally, until potatoes are tender. Add red and yellow bell pepper and continue cooking 5 minutes until peppers are tender.
This makes a quick meal - it is full of flavor and the vegetables are tender.
