For use with any CanCooker

Ingredients
- 2 pounds Skinless and Boneless Chicken Breasts Cubed
- 1 medium Onion Sliced Thin
- 1 Apple Cut into ½" pieces
- 1 clove Garlic Finely Chopped
- 1 tbsp Ground Ginger
- 2 tbsp Curry Powder
- ¼ cup Raisins
- 1 cup Coconut Milk
- 1 cup Chicken Broth
Directions
- Latch lid and put on a low heat. Cook 20 minutes. Remove from heat and let stand for a few minutes. Carefully transfer the chicken, with a slotted spoon, into a large serving bowl. Cover to keep warm. Leave the liquid in the CanCooker. Combine 2 tbsp cornstarch with 2 tbsp water and mix until smooth. Return the Cancooker to a medium heat and slowly stir the cornstarch mixture into the sauce. Continue to stir until the sauce comes to a low boil. Let boil for 1 minute and remove from heat. Combine the thickened sauce with the chicken in the large serving bowl. Serve over a bed of rice and enjoy!Note: You can increase or decrease the amount of ingredients in this recipe but please make sure to use at least 12 oz. of liquid.
Delicious – First time ever making curry always thought it was way more complicated but the CanCooker made it so simple with no issues.
