Chinese Steamed Dumplings

Chinese Steamed Dumplings

Prep Time - 20 minutes
Cook Time - 12 minutes

Ingredients

Dumplings:

  • 2 cups Flour
  • 1 Egg
  • ½ tsp Salt
  • ¾-1 cup Water Enough for a bread-like dough

Filling

  • ½ pound Cooked Pork Sausage
  • 2 Scallions Finely Chopped
  • 1 piece Fresh Ginger Finely Chopped
  • ¼ cup Peas Thawed
  • 1 tsp Chili Pepper Flakes

Dipping Sauce:

  • 2 tbsp Soy Sauce
  • ½ tsp Rice Vinegar
  • 1 tbsp Honey
  • ½ tsp Sesame Seeds

Directions

Filling:

  • Mix all filling ingredients in a bowl and chill in the refrigerator.

Sauce:

  • Mix all dipping sauce ingredients in a bowl and set aside.

Dumplings:

  • Lightly oil a large bowl.
    Add the flour and salt into another large bowl, creating a mound. Make a dent in the top of the mound and crack the egg into it. Mix the egg into the flour.
    Add just enough water to the mixture to make a thick dough. Do not add too much water, the dough needs to be thick, NOT thin like a batter.
    Turn the dough out onto a flour-dusted counter. Flour your hands and form a ball with the dough.  Place the dough into the oiled bowl and cover with plastic wrap. Let stand for 1 hour.
    Remove dough from the oiled bowl and place on a flour-dusted counter. Knead briefly and flatten the dough until very thin. Using a large round biscuit cutter or top of a glass, cut three inch rounds. Knead the leftover pieces together and cut more rounds until there is no dough left.
    Spoon heaping teaspoon of the filling into the center of the dough round. Fold the dough in half to make a semi circle shape. Seal edges with a bit of water and use a fork to complete the seal and decorate the edges.
    Place the 2-piece stainless steel rack on bottom of the CanCooker and add 12 oz water. Put 6 dumplings on the rack. Latch lid and steam for 12 minutes on low to medium-low heat.
    Serve with the Dipping Sauce and Enjoy!
