For use with any CanCooker

Ingredients
- 9 ounces Beef or Pork Chorizo
- ½ medium Sweet Onion Diced
- 10-12 Baby Tomatoes Chopped
- 6 Eggs Beaten
- Pepper Jack Cheese
- Cilantro
- Lime
- Sour Cream
- Hot Sauce
Toppings
- Shredded Cabbage
- Chopped Tomato
- Lime Juice
- Taco Sauce
Directions
- In any non stick cancooker on medium low heat add chorizo and finely diced onion. Cook 4-5 minutes until chorizo is cooked through. Add chopped tomatoes and continue cooking 2-3 minutes until tomatoes are wilted. Add the beaten eggs and cook until done. Serve on tortillas and garnish with cheese, sour cream, cilantro, lime and hot sauce if so desired.
Great breakfast recipe – Loved this for breakfast – great new twist. My family really enjoyed them.
