Chorizo Breakfast Tacos

Chorizo Breakfast Tacos

Prep Time - 10 minutes
Cook Time - 15 minutes


  • 9 ounces Beef or Pork Chorizo
  • ½ medium Sweet Onion Diced
  • 10-12 Baby Tomatoes Chopped
  • 6 Eggs Beaten
  • Pepper Jack Cheese
  • Cilantro
  • Lime
  • Sour Cream
  • Hot Sauce


  • Shredded Cabbage
  • Chopped Tomato
  • Lime Juice
  • Taco Sauce


  • In any non stick cancooker on medium low heat add chorizo and finely diced onion. Cook 4-5 minutes until chorizo is cooked through.  Add chopped tomatoes and continue cooking 2-3 minutes until tomatoes are wilted. Add the beaten eggs and cook until done.  Serve on tortillas and garnish with cheese, sour cream, cilantro, lime and hot sauce if so desired.
