Egg Frittata

Italian Breakfast Frittata

Prep Time - 10 minutes
Cook Time - 15 minutes


  • 1 tbsp Olive Oil
  • ½ cup Onion Diced
  • 4 cups Arugula
  • 2 cloves Garlic Minced
  • 1 ½ cups Cherry Tomatoes Halved
  • 1 cup Roasted Red Peppers Chopped
  • 1 tbsp Italian Seasoning
  • 10 Eggs Whisked
  • cup Milk
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¾ cup Shredded Mozzarella
  • ¼ cup Parmesan


  • In any non-stick CanCooker on a medium low heat add olive oil, onion and garlic and cook 5 minutes or until it is translucent. Add the arugula and cook for 1 minute until fragrant. Stir in tomatoes and roasted peppers. In a separate bowl mix eggs, milk, salt, pepper, Italian seasoning and mozzarella cheese. Reduce heat to low and pour egg mixture into the CanCooker, mix well with content already inside and close lid and let cook for 5-8 minutes. Check eggs to see if they are fully cooked if not continue to cook for another 2-3 minutes. Remove carefully, sprinkle with Parmesan cheese and serve immediately.


  • Not complicated at all – I always thought Frittatas were a complicated breakfast item but I was wrong and the CanCooker made it even easier then I could have ever imagined. So nice to have everything done in one pan with such little mess.

  • A recipe for the book is whole meal bread toasted with butter then put eggs,bacon with no fat,onions,sweet corn in a bowl and water and mix then cover the bowl and microwave until cooked then enjoy with a cup of tea hope you like this
