Loaded Potato Soup

Loaded Potato Soup

  • 12 ounce Bacon
  • 1 ½ cups Chopped Onion
  • 6 cups Chicken Broth
  • 4 pounds Baking Potatoes Peeled and Cubed
  • cup Butter
  • ¾ cup All-Purpose Flour
  • 4 cups Milk
  • 2 tsp Salt
  • 2 tsp Freshly Ground Pepper
  • 2 cup Diced Cooking Ham
  • 8 ounces Sour Cream
  • 2 ½ cups Shredded Sharp Cheddar Cheese
  • ¾ cup Sliced Green Onions


  • In a 12 inch skillet, cook bacon over medium heat 6 - 7 minutes or until crisp, drain on paper towels. Crumble bacon; set aside.
    Add the chicken broth, potatoes and onion to the CanCooker. Latch lid and let simmer for 10 minutes on medium/low heat. Remove from heat and mix in butter, flour, milk, salt, pepper, ham and sour cream.
    Latch lid and return to medium/low heat. Simmer for an additional 10 minutes.
    Remove from heat and add cheddar cheese, bacon and green onions.
    Garnish with additional cheddar cheese, bacon and green onions, if desired.
