Scalloped Potato & Ham Soup

Scalloped Potato & Ham Soup

Prep Time - 15 minutes
Cook Time - 35 minutes


  • 3 cups Ham Cubed
  • 3 cups Russet Potatoes Cut into 1 inch chunks
  • 2 cups Shredded Sharp Cheddar Cheese
  • 4 tbsp Butter
  • 1 Carrot Finely Chopped
  • 1 medium Yellow Onion Diced
  • 1 tsp Garlic Minced
  • ¼ cup All-Purpose Flour
  • 1 cup Milk
  • 1 cup Half and Half
  • 16 ounces Beer
  • 1 tbsp Dijon Mustard


  • Using a non-stick CanCooker JR or Companion, place on your Multi-Fuel Burner, stove or other heat source using medium low heat. Add butter, celery, onion and garlic and cook for 3-5 minutes stirring occasionally until transparent. Add flour and cook mixture for 2-3 minutes until golden brown, stirring constantly. 
    Add milk, half and half, beer, Dijon mustard, potatoes and ham. Simmer on low for 20 minutes. Add cheese and cook until melted, 5-10 minutes.
    Garnish with green onion & serve immediately.
