Scalloped Potato & Ham Soup
For use with any non-stick CanCooker, JR or Companion
- 3 cups ham, cubed
- 3 cups russet potatoes, cut into 1 inch chunks
- 2 cups shredded sharp cheddar cheese
- 4 tbsp butter
- 1 carrot, finely chopped
- 1 medium yellow onion, diced
- 1 tsp minced garlic
- 1/4 cup all purpose flour
- 1 cup milk
- 1 cup half and half
- 16 oz beer
- 1 tbsp Dijon mustard
Using a non-stick CanCooker JR or Companion, place on your Multi-Fuel Burner, stove or other heat source using medium low heat. Add butter, celery, onion and garlic and cook for 3-5 minutes stirring occasionally until transparent. Add flour and cook mixture for 2-3 minutes until golden brown, stirring constantly.
Add milk, half and half, beer, Dijon mustard, potatoes and ham. Simmer on low for 20 minutes. Add cheese and cook until melted, 5-10 minutes.
Garnish with green onion & serve immediately.
*Spray inside with non-stick cooking spray to aid in clean-up for JRs & Companions.
