Green Grub Luck: Fast St. Patty's Corned Beef

Green Grub Luck: Fast St. Patty's Corned Beef

1. The Classic: CanCooker Corned Beef and Cabbage

There is nothing quite like the traditional platter of hearty root veggies and savory beef. Because the CanCooker uses steam to circulate heat, the moisture is locked in, and every single potato and carrot absorbs that rich, savory corned beef flavor.

Prep Time: 20 mins | Cook Time: 50 mins | Serves: 12

What You'll Need:

  • 3 lbs Corned Beef Brisket (with spice packet)
  • 5 lbs New Potatoes
  • 2 bags Baby Carrots
  • 1 head Cabbage (quartered)
  • 12 oz Water
  • 12 oz Beer (A classic Irish stout or amber ale works wonders!)

The Method:

  1. Layer your vegetables (potatoes, carrots, and cabbage) at the bottom of the CanCooker.
  2. Place the corned beef right on top of the veggies.
  3. Pour in your water, beer, and the seasoning packet that came with the beef.
  4. Latch the lid down and place it on a medium-low heat source.
  5. Cook for just 50 minutes. Once done, remove it from the heat and let it rest for 10 minutes before opening.
  6. Transfer to a large serving tray!

Pro-Tip: Want to take it to the next level? Serve it with our traditional Irish White Sauce with Parsley. Just simmer milk infused with onion, garlic, and a bay leaf, then whisk it into a simple butter-flour roux. Stir in a heavy pinch of fresh chopped parsley and drizzle it right over the top of your veggies. (See the full gravy instructions here).

2. The Comfort Bowl: Corned Beef and Cabbage Soup

  5. Remove the bay leaf, ladle into deep bowls, and serve with some crusty Irish soda bread! (Check out the full recipe here).

(Note: If you are using a CanCooker Jr. or Companion, give the inside a quick spray with non-stick cooking spray before starting to make cleanup even easier!)

The Steam Convection Advantage

Why do these stews come out so well in the CanCooker? When you boil corned beef the traditional way, a lot of the flavor gets left behind in the water. With the CanCookerโ€™s sealed steam convection system, the flavors are forced into every layer of your meal. The beef stays buttery and tender, the vegetables don't turn to mush, and the cooking time is slashed.
