Lemon & Dill Salmon with Spinach

  • 1 - 2 lbs. salmon steaks
  • 2 lemons
  • 16 oz. fresh spinach
  • 1/2 tsp black pepper
  • 3/4 tsp kosher salt
  • 2 tsp dill
  • 16 oz. apple juice

For Salad:

  • 16 - 20 grape tomatoes
  • 3-5 diced mushrooms


Using any CanCooker, place the two piece rack inside of the CanCooker and spray inside of can with vegetable spray for easy clean up and add the apple juice. Place CanCooker onto a burner using medium low heat and heat until steaming.

Cut the lemons into slices and place over the rack using one of the sliced lemons. Position salmon steaks over the lemons and season with dill, pepper, and salt. Arrange remaining lemon over salmon and cover with 8 oz. of spinach.

Put lid on CanCooker and steam for 15 – 20 minutes. Let stand for 5 minutes.

Dress dinner plate with remaining spinach, tomatoes, and diced mushrooms. Remove salmon and cooked spinach from the CanCooker and place over the salad. Serve with additional lemon wedges if desired.
