For use with any CanCooker

Ingredients
- 3 tbsp Olive Oil
- 1.5 pounds Red Potatoes
- 2 Onions
- ½ pound Roasted Pepper
- ½ pound Chopped Mushroom
- 4 Salmon Filets
- 2 tbsp Lemon Juice
- CanCooker Creole Seasoning
Directions
- Coat the bottom of your CanCooker with olive oil. Add your sliced red potatoes spread evenly across the entire surface. Put your separated onions on top of the potatoes, spread out evenly. Add roasted peppers on top of the onions and potatoes. Add chopped mushrooms on top of the roasted peppers.Set your four salmon fillets on top of the vegetables, spread out evenly. Add lemon juices over the salmon fillets. Add CanCooker Creole Seasoning over fillets, seasoned to taste.Close lid and cook on medium-low heat for 30 minutes.Remove lid, remove salmon, and enjoy!

This turned out to be pretty tasty. The salmon was tender and had a good flavor, mixed with the onion, potatoes and peppers. It was a light dinner
